Just wanted to pass along a super recipe I found in my Mom’s recipe box. It is PERFECT for that hot day when you want a light lunch. Nothing better than cold gazpacho soup with a cheese and cracker tray! Here is a super recipe for a Mock “Boursin” cheese spread. (of course featuring my favorite…Philly Cream Cheese!) Whatever you do not eat on a cracker, mix into mashed potatoes for a fun kick! Also, super to dollop into the gazpacho.
Mama’s Mock “Boursin-esque” Spread
2 garlic cloves, crushed
8 oz. butter, room temperature
16 oz. Philly cream cheese, room temperature
3 tablespoon Parmesan, grated
1 tablespoon fresh dill, chopped fine
1/2 teaspoon marjoram
1/2 teaspoon basil
1/2 teaspoon chives
1/2 teaspoon black pepper
1/4 teaspoon dried thyme
2 tablespoon fresh parsley, minced
Mix together the butter and cream cheese till smooth. Chop all of the herbs (use fresh unless notated) and mix in with cheese. Add in garlic and parmesan cheese. Place in airtight container and chill overnight. Perfect as a mix-in or eat alone with crackers and veggies!
