Few recipes in this world are as diverse as that of the sandwich.
Most of us grew up eating peanut butter and jelly or a grilled cheese made with processed “cheese product” and a bowl of tomato soup.
Today the sandwich has taken on a whole new spin in the culinary world. We’ve thrown the classic grilled cheese sandwich out the window and replaced it with a ham and goat cheese panini spread with irish butter and grilled to a golden perfection. The old PB&J is now 2 slices of challah bread filled with sliced bananas and Nutella and dusted with powdered sugar.
Its no secret in my house that this Mama loves sandwiches! My newest favorite is the Naughty Truck Driver and let me tell you…its is 100% truck driver endorsed! I took my favorite sandwich to Oklahoma City’s Channel 9 News and I am pleased to report it is also news reporter endorsed as well!
I shared my recipe for the Naughty Truck Driver a few weeks back but for those of you that missed it I will lay it all out for you again:
Naughty Truck Driver sandwich with real homemade Ranch dressing
8 pieces country white bread
2 cups sharp cheddar cheese, grated
12 ounces oven roasted turkey breast
8 strips thick country bacon
olive oil
2 cups caramelized onions (about 2 large onions sliced)
4 Tablespoons butter, softened
Ranch dressing recipe, see below.
Preheat a cast iron skillet on medium high heat.
Cut onion in half and slice. Add to skillet and top with olive oil. Cook slowly until caramelized, 5 to 8 minutes.
Place 1 Tablespoon of Ranch dressing on both slices of bread and then add grated cheese to each piece of bread. Put turkey slices on one piece of bread and top with 2 pieces of bacon and some of the caramelized onions. Place pieces of bread together and butter both sides. Add to hot skillet and cook until toasty and cheese is melted.
Serves 4 sandwiches
Ranch Dressing:
8 teaspoons dried minced onion
1 Tablespoon dried parsley flakes
1 teaspoon paprika
2 teaspoons sugar
2 teaspoons salt
2 teaspoons pepper
1 1/2 teaspoons garlic powder
1 cup buttermilk
1 cup mayonnaise
To make seasoning mix: Combine the above dried ingredients in a small bowl. Store in an air-tight container.
To make 2 cups of dressing: In a bowl combine 1 Tablespoon of dried mix with mayonnaise and buttermilk. Stir until well combined. Place in a mason jar and chill at least 2 hours before serving.

That sandwich looks AWESOME, Caryn. As in, “I’ll be making it soon,” awesome. Until that time, here’s my favorite sandwich:
One giant slab of homemade meatloaf
2 large pieces of good french bread (or good whole wheat in a pinch)
liberal dose of quality ketchup
One hearty glass of merlot
Instructions: Have a sip of Merlot. Cut bread in half. Have another sip of Merlot. Place slap of meatloaf between slices of bread, pulling off a nice chunk to sample (gotta ensure the goodness). Have another sip of Merlot. Slather meatloaf with ketchup. Have another sip of Merlot. Place other half of bread on top, and smash together firmly, but not so hard as to make all the ketchup squish out the sides. Have a sip of Merlot. Proceed to eat sandwich, punctuating the deliciousness with the occasional sip of Merlot. When finished, wash down with remainder of Merlot. Repeat until satiated.
Thanks for the great recipes!

Good, thick cut bacon always makes a sandwich yummy!
Caryn Ross says
Bacon is practically a staple in my kitchen. If we don’t have it chaos is inevitable.

My favorite sandwich is a panini with:
2 slices favorite bread
thin sliced turkey
provalone
thinly sliced granny smith apples
onion relish (that I get from International Pantry) can’t remember the name
Press and enjoy!
Caryn Ross says
I love to use granny smith apples in my sandwiches too! They are a bit too tart to eat by themselves but in a sandwich or salad they really bring out the sweetness of the other ingredients.
Phil Pugh says
spread peanut butter on 2 pieces of bread. The. Place 4 chocolate covered Grahame from keebler on the PB. Stack like a sandwich then microwave for about 15-20 seconds. Slice into quarters. Sweet delicious goodness. Man it’s good
Caryn Ross says
Mmmm! That sounds like a perfect dessert sandwich!

My favorite sandwich is a grilled, marinated portobello mushroom with romaine, roasted red peppers and provolone cheese on a good, crusty bread.
Caryn Ross says
This is what I love about mushrooms…when you marinate them they suck up all those yummy flavors of the marinade and they truly do have a meaty-texture. What a great recipe!

My “fancy sandwich” like I call it is delicious… Even my 4 year old loves them!
•Whole grain bread
•gorgonzola cheese (I made it with Brie or blue cheese for stronger flavor)
• thinly sliced PEARS
•watercress sprigs (when using Brie I used fresh spinach)
• walnuts.
I place all the ingredients on the bread and put the sandwiches in the oven (broil) for 1 minute or until cheese melts.
I tried to make a panini but I don’t have a panini maker 🙁
Tried old school with a skillet but works better in the oven.
Enjoy!
Caryn Ross says
That sounds delicious! I will have to definitely give that a try soon. Good luck in winning the Panini press!

Hey, I love the chicken sandwich, at Snuffers, in Dallas. The Warren Theatre big screen seating serves a pretty good one too. However, I loved the buffalo chicken sandwiches you made at the Home & Garden Show!!! Yummy!!!

My secret to the ultimate sandwich is Kraft’s flavored Mayo….love them!! Also, cheese and more cheese. Did I mention cheese?
Rowdy Cole says
Hey Ms. Caryn,
My favorite sandwich of late is a Rueben, but instead of using corned beef, I like to use grilled chicken breast. I use traditional rye bread, LOTS of swiss cheese, drained sauerkraut, grilled chicken breast and Russian dressing. I usually use my little George Foreman grill and toast away.
I love it, and it’s slightly healthier than the old standby.

Love panini’s and this recipe sounds awesome. My husband found some garlic mayo at Homeland that is awesome with a sandwich like this. Thanks for sharing. Vickie

My favorite sandwich is a Beach Sandwich. It was created by my grandmother, and we only had it when we were at the beach. It pairs well with Pringles and Diet Coke (Pringles stay fresher longer when you are vacationing near water).
Beach Sandwich
Kaiser Roll bottom
Mayo/Miracle Whip
Big, juicy locally grown tomato
Small amt of salt and pepper
Leaf/Romaine Lettuce
Ham (I prefer honey, but my grandma used country ham)
Pimento Cheese (homemade, of course)
Kaiser Roll top (I prefer a seedless roll, but to each his own)
Sandwich is listed in the optimal order, and is absolutely perfect after playing on the beach all morning.
Vickie Doswell says
okay I added you to twitter, following you here and on FB! Yay! Wondered where you had gone now I can follow you everywhere. I think my favorite sandwich is an old favorite of mine. I love grilled/panini style ham and cheese (not swiss but that creamy mozzarella that runs everywhere!) with the garlic mayo and lettuce and tomato! Yummy!
