If you are like me then you probably only pull out the waffle iron 3-4 times a year. After being on stranded on the boat without my stove top I was forced to make my waffle iron be the source of all cooking! I felt like a Girl Scout again trying to earn a badge! But I did it! How about fried potatoes using tater tots? They are incredible! I even used sweet potato tots! Those were a family favorite.
Garlic and Herb Hashbrowns
1 package garlic and pepper tater tots, thawed
1 teaspoon chives, snipped
sea salt and pepper
parmesan cheese, shredded
Preheat your waffle iron to high heat. Spray with nonstick cooking spray. Line the tater tots all over the waffle iron then lower the top. Cook for 5 minutes. Remove from waffle iron. Sprinkle with more chives and grated parmesan cheese.
Strawberry and Cream Shortcakes
1 white cake mix
1/3 cup canola oil
1 cup water
4 large eggs
zest of 1 lemon
fresh strawberries
whipped cream
Preheat waffle iron to medium high heat. In a medium sized bowl and a had mixer, beat together the canola oil, water and eggs for 2 minutes. Stir in the lemon zest. Spray your waffle iron lightly with nonstick cooking spray. Place 1 cup of batter in your waffle iron. Close and cook according to your waffle irons specifications. Remove from the waffle iron and top with sliced strawberries and whipped cream.
