Tonight I was the recipient of a deliciously moist chocolate cake. It was made by my awesome cat sitter, Elise.
Elise is my 15 year old neighbor and she loves to bake. Earlier this weekend she told me that for Christmas she received a bunch of “old” cookbooks her mom had found at an antique store and she wanted to know if it would be okay if she brought over one of her latest creations for my critique.
Little did Elise know that there has NEVER been a chocolate cake that I did not like. Even so, this cake was awesome!!! And sure enough it was a classic….The recipe was for none other than Mississippi Mud Cake!
I am so proud of Elise. She reminds me of me when I was her age and I caught the cooking and baking bug. She is quite creative and doesn’t shy away from trying new things.
In fact, when I was competing in the Real Women of Philadelphia cooking competition last Spring I used one of her cheese cake recipes as my entry in the dessert competition!
Elise truly is a very talented girl and I love encouraging her to keep experimenting in the kitchen.
Thankfully Elise was more than happy to share her recipe with me and I, in turn, wanted to share it here with all of you.
Elise’s Mud Cake
Cake
2 tbsp. cocoa
1 c. unsalted butter
2 c. sugar
1 tsp. vanilla or vanilla paste
4 eggs
1 1/2 c. chopped pecans
1 (7 oz.) jar marshmallow creme
4 c. sifted powdered sugar
1/2 c. cocoa
1/2 c. evaporated milk
1 tsp. vanilla
