Today is my son’s 14th Birthday! I am constantly trying to slow this process down. I do not want my baby to grow up and go away. It was not that long ago that I used to think when would this be over. Usually after I was covered in baby formula vomit and a dirty diaper. Now I take that back! I would do all of that over again just so I could snuggle that precious child to my heart and watch him sleep in my arms. Sounds silly but if you are a momma then you know exactly what I am talking about. So, in honor of Jackson’s birthday I made an ultimate ice cream birthday cake! It is unbelievable!
Mint Chocolate Dive
1 quart Braum’s mint chocolate chip ice cream, softened
2 packages Braum’s chocolate fudge brownies
4 Braum’s ice cream bars
1/2 cup Braum’s hot fudge
1 can spray whipping cream
In a 8×8 baking pan line the bottom with parchment paper with the flaps hanging over. Place 9 brownies frosting side up. Spread ice cream all over the top. Place a piece of parchment paper on top and press to make even and put into freezer and freeze for 4 hours. Remove from freezer and using flaps lift the ice cream cake out. Place a sharp knife in warm water and cut into 4 wedges. Then press an ice cream bar into the top. Drizzle with hot fudge and top with whipping cream!
