I love to travel. I love to immerse myself in their culture, daily life and to feel like I am living a day in their shoes. That goes for anywhere I go. I never gravitate to those places where the tourists go but where the locals gather. I enjoy chatting with everyone and learning about the their way of life. As you can probably guess, food is always discussed. No better way to bring home your vacation than cooking one of the dishes! Here are some simple recipes of places I love and places I wish to one day go!
Spinach Pies
3 cups fresh Spinach, chopped
1 package puff pastry, thawed
1/4 cup Feta cheese, crumbled
1/2 onion, diced
Lemon juice
Olive oil
Preheat oven to 400 degrees. Line a baking sheet with parchment paper. In a sauté pan, over medium heat sauté the onion and spinach till wilted. Sprinkle with lemon juice and salt to taste. Cut each parchment sheet into 9 squares. Place a spoonful of spinach in the center of each square. Sprinkle with feta. Fold over into a triangle and return to the freezer for ten minutes to chill. Bake for 15 minutes until golden brown.
Easy Cannoli
2 cups whole milk Ricotta cheese
1/4 cup powdered sugar
1/4 Mini chocolate chips
Juice of 1/2 a lemon
1 teaspoon vanilla
Pre-made cannoli shells
Ziploc bag
In a small bowl stir together the ricotta, powdered sugar, chocolate chips, vanilla and lemon juice. Place the cream mixture in a Ziploc and squeeze to fill each shell. Dip the ends in mini chocolate chips and chill till you are ready to eat.
