When I met my husband I was quickly introduced to the elusive Chocolate Dessert. This was Jack’s favorite thing his Grandma made and asked me to make it for him almost weekly. Now that we have been married for almost 20 years I have found that these desserts are a staple in the midwest. There are a few must have’s in any good dessert dish.
- cream cheese
- powdered sugar
- whipping cream
- crust of some sort (usually cookies, cake, etc.)
So, here are my creations. They are not beautiful but oh my goodness they are good!
Peanut Butter Dream Dessert
1 package of Oreo cookies, crushed
3 tablespoons butter, softened
1 package cream cheese, softened
1/2 cup chunky peanut butter
1 1/2 cups powdered sugars, divided
2 cups whipping cream, whipped
1 package Reese’s miniature peanut butter cups, chopped
1 cup cold chocolate milk
1 package instant chocolate fudge pudding mix
Crush all of the cookies except for 4. Place the cookie crumbs in a medium sized bowl and pour in melted butter. Stir till cookies are coated. Press into an ungreased 8 inch square cake pan.
In a large bowl, beat the cream cheese, chunky peanut butter and 1 cup confectioners’ sugar until smooth. Fold in 1/2 of the whipped cream and spread evenly over the crust. Sprinkle with chopped peanut butter cups.
In a medium sized bowl whisk the chocolate milk, pudding mix and remaining powdered sugar. Allow the pudding to sit for about 5 minutes and then fold in the remaining whipped cream. Spread over peanut butter cups. Sprinkle with crumbled cookies and chopped peanut butter cups.
Strawberry Tiramisu
1 cup strawberry jam
1/3 cup orange juice
1 package cream cheese
1/2 cup ricotta cheese
2 tablespoon sour cream
2 cups whipping cream
3 tablespoons powdered sugar
1 teaspoon vanilla extract
1 Braum’s pound cake, sliced thin
3 cups sliced fresh strawberries
In a small saucepan simmer together the strawberry jam and orange juice. Remove from heat and allow to cool. In a new medium sized bowl mix together the cream cheese, sour cream, ricotta and powdered sugar. Set aside. Now it is time to assemble!
To assemble: Pour 1/3 of strawberry jam mixture into the bottom of the pan. Spread to cover. Cover the bottom of the pan with the slices of pound cake. Now spread on 1/2 of the cream cheese mixture over the top of the poundcake. Place slices of strawberries over the top and then top with 1/2 of whipped cream. Now it is time to do the second layer. Dip your slices of pound cake in the jam and then continue layers. Finish with whipping cream and garnish with fresh sliced strawberries. Chill for 12 hours.
