Well, we are just days away from the big game and even more important….the food. There are a few things I have learned about throwing a good Super Bowl party.
- There is always going to be “that guy”. The one who double dips, leaves chip debris in the salsa, etc…How you fix that is by preparing individual dip cups in those clear disposable little chinet cups. Best part is that you pitch it when they are done. The dudes can sit in front of the tv and dip to their hearts content!
- Serve the main course in a way that they can graze on it during pre-game, half time and then as they leave. Believe me…the moment you put it away that “guy” will ask, “where are the brats?.” So, to keep your brats moist and succulent lay them in a bed of beer and sliced apples! That way there will not be any dry dogs.
- For those of us who can’t do too much chili. Think “bad boiler.” Then try serving a vegetarian selection like Beer Cheese Soup. Perfect for anyone who wants a little something different yet has all the flavors Dudes like!
- Use paper products. This is not the time to breakout the good dishes. Use something that is easy to pitch and makes cleanup a snap! Remember it is Sunday night and tomorrow is work/kids to school.
Here are my recipes that I will be making this year!
Beer Cheese Soup
1 tbsp unsalted butter
1 onion, chopped
3 carrots, chopped
3 celery stalks, chopped
2 cloves garlic, minced
4 tbsp flour
1 cup lager beer
4 cups broth
1 cup whipping cream
3 cups cheddar, shredded
1 tbsp Dijon mustard
1 tsp Worcestershire Sauce
1/4 tsp pepper
1/8 tsp cayenne pepper
salt to taste

Melt butter in the bottom of the stock pot. Add in the onion, carrots, celery and garlic. Sauté till tender. Sprinkle the flour over the veggies. Stir to coat all of the veggies with flour. Add in the beer and broth. Bring this to a boil. Reduce heat and add in the cheddar cheese, whipping cream, worcestershire sauce, pepper, cayenne pepper and salt. Stir till cheese is melted. DO NOT BOIL. Using an immersion blender or regular blender, blend the soup till it is smooth and there are no lumps. Serve in mugs or a sourdough bread bowl.
Best Bratwurst w/Caramelized Onions and Beer Cheese
1 package Schwab’s Bratwurst, grilled
4 granny smith apples, sliced thin
1 bottle of lager beer
1 onion chopped, caramelized
Beer Cheese:
1/2 block Velveeta, cubed
1/2 cup beer
1 clove garlic, minced
In a large sauté pan place onions and beer inside and heat to a simmer. Place grilled Bratwurst on the bed of apples and cover. Cook for 15 minutes. Remove from the apple sauté and serve on a bun. Top with caramelized onions and beer cheese drizzle!
To make the Beer Cheese:
In a microwave bowl melt the Velveeta and garlic with the beer. Stir till smooth.
