I always am needing a little short cut here and there. For years I have relied on my slow cooker. But a few months ago mine died. It had been a good friend for many years but finally it had said ENOUGH and croaked. So, I went on a mission to find me the perfect new assistant in my busy kitchen. I needed a slow cooker that actually cooked things precisely. No more burning or not cooking enough. Better timer. Better temperature settings and most of all it had to look decent. I take my slow cooker to a lot of functions. So, it needs to be easy to transport. Well, after buying 2 cheaper brands and them failing. I found….

Here is my go to breakfast casserole I make for New Year’s Morning!
Slow Cooker Mexi Egg Bake
30 oz package of frozen hash brown (shredded)
2 cups chopped ham
1/2 onion, diced
1 red bell pepper, diced
2 cups Mexi-blend shredded cheese
1 can green chilis
12 eggs
1 cup whole milk
1 tsp kosher salt
1 tsp black pepper
Spray the inside of the slow cooker with cooking spray. Place shredded hash browns in the bottom of the slow cooker. In a medium size bowl mix together the eggs, milk, salt, pepper, ham cubes, green chilis and onion. Pour over the top of the hash browns. Cover and cook on low for 6-8 hours or on high for 3-4. It is done when the bake is not runny in the middle and the edges are browned. Serve with warm biscuits.

1lb. Ground beef (cooked and drained)
1pkg taco seasoning
1 can whole corn
1 can kidney beans
1 can diced tomatoes if you want a little spice
(optional)
Place on crock pot for about 30 min on high! Quick and easy

Hot fudge brownies!!!!
1 brownie mix
1 cup boiling water
1 cup chocolate syrup
Prepare brownie mix as directed on box.
Pour brownie mix into bottom of crock pot.
Mix chocolate syrup with boiling water.
Pour over brownie mix.
Cook on high for 2 ½ to 3 hours.
Let set up for 15 minutes.

I like to get a pork roast, trim as much visible fat as possible, then rub it all over with crushed garlic and seasoned salt. Cook on low 6-hours. Remove meat, reserve drippings. Shred meat and return to crock pot; add enough drippings to make moist. Serve on buns with BBQ sauce, some baked beans (Bush’s are fine), and coleslaw.

Deer roast, slow cooked for 6 hours on low, then the last one hour or two pour your favorite barbeque sauce on top for flavor. SOO delicious! This could also work well with a regular roast. Does not need to be an expensive cut of meat.

Here is one of our favorite things to make in the crockpot. We get a big smoked turkey leg, put it in the crockpot, about one small to medium onion chopped up (optional), one carton vegetable or turkey stock and one pound of pinto beans. Let it cook on low all day and you have YUMMY!. Especially when this cold winter weather has moved in. The flavor from the turkey leg is soooo good, we rarely even add salt.

Taco Soup:
2 lbs hamburger (browned)
1 pkg Taco Seasing
1 pkg dry ranch dip mix
dash salt & pepper
1 can Rotel
1 largge can ranch style beans
2 large cans yellow hominy
1 large can tomato sause
Let simmer in crock pot. Serve with crackers –corn bread or tortilla chips. We also add cheese to the bowl of soup for those that like it.

i love to make pork country style ribs. Just toss ’em in and top with a small jar of Heads Country BBQ. Cook on low for about 8 hrs. I put them in go to work and they are ready when I get home. I have gotten hung up at work and they are fine even after 10 hrs. When you go to take them out all you get with the tongs is bones! Oh, so tender. If you make a big batch you can chunk up the leftovers and add a little more sauce for sandwiches.Great for a house full for boys.

My favorite dish to make in a slow cooker has always been a toss up between bbq’d lil smokies with grape jelly and nacho cheese dip. The grape jelly with the lil smokies is new, but is slowly becoming the favorite. 🙂

I would like to have a crock pot that cooks food in the time required without overcooking or burning. I like to cook smoked sausage, cabbage, and potatoes together in a crock pot, along with carrots and spices. It is really good. I like the recipes you are sharing, especially those today on 9.

I love to make a crock pot chocolate cake with pudding. It’s great for camping so you don’t use up your propane to heat the oven or overheat your camper in the summer but yet you have a tasty treat while “roughing It.” This always sticks and gets to hard on the edges in my crockpot so the Delonghi slow cooker sounds ideal.

My favorite slow cooker item is by far Italian Beef. I sear my tri-tip which is rubbed down generously with fresh cracked pepper and coarse sea salt. Then I place it in my slow cooker with whole garlic cloves, oregano, good beef broth and a 1/2 to full jar of pepperocinis. Let it go low and slow until it is falling apart and serve on fresh white rolls. You can throw some giardiniera on it if you like or even some provolone or mozzarella. Me? I prefer a spread of Helmann’s and a bit of the jus. Makes an awesome pot luck to take to work or to put out for a bowl watch party.

I love slow-oven stew translated to the crock pot. Place stew meat in bottom and top with chopped celery, onions, carrots, potatoes, and frozen peas. Sprinkle one Tablespoon dry tapioca over the top and add one cup tomato juice, V8, or broth. Cook 8-10 hours on low. The liquid and tapioca combine with cooking juices to form a delicious brown gravy.
