There is really no better gift than a home cooked meal. Maybe it is just me, but I would prefer an incredible meal with great fellowship over jewelry or perfume. The simple gift of sharing a meal with someone many times touches their soul. Food is the great equalizer…with all of that said, cooking does not have to be a chore. A simple soup is perfect to share with others. Break out the mason jars and use those to deliver quarts of happiness. Here is my simple recipe to make an incredibly hearty soup! If you do not have tortellini then sub that for whatever noodles you might have in the pantry!
Hearty Tortellini and Spinach Soup
1 onion, chopped
3 ribs celery, chopped
1 cup carrots, chopped
3 sprigs fresh thyme (or dried)
1 cup mushrooms, sliced
2 cups fresh baby spinach
1 can fire roasted tomatoes
1 package refrigerated ravioli or tortellini
1 large box chicken stock
salt and pepper
Saute the onion, celery, carrots, mushrooms and fresh thyme in a little bit of olive oil till they are tender. Add the chicken stock and tomatoes. Bring to a boil. Now is when you add in the ravioli or tortellini. Continue cooking till ravioli float to the top. That means they are thoroughly cooked. Serve soup hot with a sprinkling of parmesan cheese.
**Quick tip: Make a double batch and fill mason jars. Wrap with a little ribbon and add a card. Perfect gift for a teacher or a co-worker!
These are so so so good! I have made “real” garlic knots using pizza dough but in a pinch the biscuits worked perfectly! Best thing is that they are so easy! I encourage you to make more than one can. They fly off the plate!

Easy Garlic Knots
1 package large refrigerated biscuit dough
2 tablespoons shredded parmesan cheese
1/2-3/4 teaspoon minced garlic
1/2 teaspoon Italian seasoning
1/2 teaspoon sea salt
1/2 stick unsalted butter, melted
Preheat oven to 400 degrees. Spray a cookie sheet with non stick cooking spray. In a small bowl mix together the melted butter, garlic, Italian seasoning , and sea salt. To make the knots: Cut each biscuit in half and form into a thick rope. Tie each rope in a knot and then roll in the garlic butter mixture and place on the baking sheet. Bake for 10 minutes or until golden brown. Serve hot!
