So, if you would like to taste some of the best jams around. Then look no further than Garden Club. One of my favorite things to make with the Pineapple Preserves is Pina Colada Cheesecake Bars. Oh my goodness…Eating one of these makes you feel like you are in Maui. They are so simple to make and the best part is that they are made in one bowl!

Pina Colada Bars
1 vanilla cake mix
½ cup chopped macadamia nuts
½ cup melted butter
1 jar of Garden Club Pineapple preserves
1 package cream cheese
¼ cup sugar
1 egg
1 tsp rum extract
½ cup coconut
Preheat oven to 350 degrees and spray a 9×13 pan with nonstick cooking spray. In a large bowl, mix together the cake mix, melted butter and macadamia nuts. Remove ½ cup of crumbles for the topping and add in the coconut. Set aside. Press the remaining into the bottom of the pan. Spread the entire jar of preserves over the top of the crust. Then in a medium sized bowl, mix together the cream cheese, sugar, rum extract and 1 egg. Spread over the preserves and then sprinkle with topping. Bake for 30 minutes. Allow to cool and serve!
