Are you getting ready for Easter? Tired of grey winter weather? Well, these luscious lemon bars are literally like sunshine in a bite.
This recipe comes from my kiddos beloved Teacher Pat at Norman’s First Christian Church Mother’s Day Out. Pat was quite simply a miracle worker. She put every 2 year old to sleep on their mats everyday. It was a sight to see tip toeing into the room while 10 little people slept. When Pat was not at MDO she raised 6 sons. This is her recipe and it has been in my family cookbook for 20 years! Truly a classic that can’t be matched!
Luscious Lemon ? Bars
Crust:
2 cups all purpose flour
1 stick unsalted butter, melted
½ cup powdered sugar
¼ teaspoon salt
Lemon Filling:
4 large eggs
2 cups sugar
6 tablespoon lemon juice
2 lemons, zested
4 tablespoon flour
1 teaspoon baking powder
Powdered sugar, for dusting the top
Preheat the oven to 325 degrees. Spray a 9×13 pan with nonstick cooking spray. Combine all of the crust ingredients in a bowl and press into the bottom of the pan. Bake for 20 minutes. While the crust is cooking make the filling.
In the same bowl you made the crust, beat the eggs with an electric mixer for 2 minutes. Add in the sugar and lemon zest. Continue to beat together until combined. Stir in the lemon juice. Using a fine mesh strainer, sift in the dry ingredients while the mixer is running and continue to mix until there are no lumps.
Remove the crust from the oven and immediately pour the lemon mixture over the top of the HOT crust and return to the oven to bake for 30 minutes. Remove the bars from the oven and allow them to cool on the counter. Cover with plastic wrap and chill for 4 hours or overnight. Cut into bars and dust with additional powdered sugar before serving.
