Southwest Eggrolls
1 package egg roll wrappers (produce section)
2 Schwab’s hot links, casings removed and links chopped
1 1/2 cups cheddar cheese, shredded
1/2 cup black beans
1/2 cup corn
1/2 cup fresh salsa or pico de gallo
2 green onions, chopped
Preheat oil to 350 degrees in a large dutch oven or fryer. Mix together the chopped hot links, cheddar cheese, black beans, corn, salsa and green onions. Place a tablespoon of mixture in the center of the egg roll wrapper which is sitting on your surface in a diamond shape. Brush all edges of wrapper with water. To roll, simply place the bottom corner over the mixture, roll slightly and then fold in the sides and continue to roll. Place seam side down. Put finished egg rolls in hot oil and cook till the outside is golden brown. Serve with chipolte ranch dressing.
Fried Peaches and Cream
1 package egg roll wrappers
1 1/2 cups pre-prepared cheesecake filling (refrigerator section)
1/2 cup frozen peaches. thawed and chopped
1 cup cinnamon and sugar
Preheat oil to 350 degrees. In a medium sized bowl mix together the peaches and cheesecake filling. Add 1/2 cup of cinnamon sugar and mix well. Roll just like an egg roll! Fry the rolls till the outside is golden brown. Place on a paper towel lined plate and sprinkle with additional cinnamon and sugar. These freeze great to fry later!
