The fam and I have been down here in West Palm for about a week. We have noticed that we are definitely in a certain weather pattern. Sunny and humid all day till about 4 o’clock when the storms roll in. For some this might be a bummer but I love it! We go to the sand bar, play on the beach or swim during the day and then about the time we are too hot or had too much sun we bring it indoors. Once we change our clothes and take a shower we look out and it is dark clouds everywhere and that means a storm is brewing. What a perfect way to end the day with cool rain! It is obvious why Florida is always so green and the flowers are blooming year round! Makes me so happy to see all the pretty plants.
Another great side note with this weather pattern is that I have been cooking here on the boat for dinner. Here is a great meal I made which is quick and easy (see recipes below)….Shrimp and Scallops Newburg, Sauteed fresh spinach and Sassy Mashed Potatoes. The kids loved it and I have to say I really loved it as well. If you cannot get scallops just use Shrimp or Shrimp and crab meat! Dessert is ice cream from the one and only Ice Cream Club! Shrimp and Scallops Newburg
2 tablespoon garlic butter
1 lb. bay scallops
1 lb. shrimp, uncooked but peeled and de-veined
2 tsp. Old Bay seasoning
2 cans condensed cream of shrimp soup, Campbell’s
1/2 cup sherry
6 oz. Philadelphia cream cheese
1. Preheat large saute pan for 3 minutes. Add garlic butter to pan and then add scallops and shrimp. Stir and add seasoning. Cook will scallops are opaque and shrimp are lightly pink. Do not overcook!
2. Stir in soup, sherry and cream cheese until well blended. Reduce heat to low and allow to simmer 4-6 minutes.
Sauteed Spinach
2 bags of fresh spinach
2 tablespoons olive oil
salt and pepper
1. Preheat pan with olive oil.
2. Add fresh spinach to pan and saute till slightly wilted. Add salt and pepper to taste. Turn heat off once spinach begins to wilt slightly, it will continue cooking and you do not want mushy spinach!
Sassy Mashed Potatoes
6 golden potatoes, cut into small cubes and boiled in salted water
1/4 cup half and half
2 tablespoons Parmesan cheese, grated
2 tablespoon garlic butter
salt and pepper
1. Boil potatoes till tender. Drain water. Add in half and half, garlic butter and Parmesan cheese. Mash with hand masher or for a “whippier” consistency use a hand mixer. Add more milk as needed.
