Kids are home and that means they are going to be raiding your pantry for snacks! I have come up with some super simple recipes you can make for pennies rather than buying pre-packaged snacks. They store well in Ziploc bags and are easy to tuck in a beach bag for the lake, pool or beach!
Sassy Snack Mix
1 pound bag mini pretzels
1/2 – 1 tsp cayenne pepper
1 tsp lemon pepper
1 1/2 tsp garlic powder
1 pkg ranch dry mix
3/4 C canola oil
1 can Virginia peanuts or cashews
gallon zip lock baggie
In a small bowl whisk together the ranch mix, cayenne pepper, lemon pepper, garlic powder and canola oil. Pour 1/3 of mini pretzels in a tub with a lid along with a 1/3 of the nuts. Pour a 1/3 of the seasoning mixture over the top. Put the lid on your container and toss lightly. Then continue till all ingredients are combined. Allow the mixture to sit in the airtight container for a couple of hours. Giving it a gentle shake every so often. Then line baking sheets with paper towels and pour out the pretzel mixture to sit over night and dry out. Store in ziploc bags till you are ready to eat!
Zesty Hummus with Parmesan Pita Chips
2 cans garbanzo beans, drained
3 cloves garlic
1/2 cup olive oil
2 tablespoon tahini paste
juice of one lemon
sea salt
Combine all of the ingredients in a food processor or blender. Blend together till all ingredients are smooth. Serve with pita chips.
Parmesan Pita Chips
3 whole wheat pita bread rounds, cut in half
3 white pita bread rounds, cut in half
olive oil
1/2 cup parmesan cheese
1 tablespoon italian seasoning
Brush with olive oil and sprinkle with seasoning. Cut into wedges and bake at 375 for 15 minutes and the flip over and bake another 10 minutes. Cool and serve!
