Perfect Picnic Slaw
1 tablespoon sugar
2 tablespoons brown sugar
1 teaspoon ground mustard
1/2 teaspoon black pepper
1/2 teaspoon celery salt
2 tablespoons vegetable oil
1/4 cup cider vinegar
1 bag coleslaw mix
3 green onions, chopped
1/2 bell pepper, chopped
In a large bowl mix together the coleslaw mix, green onions and bell peppers. To make the dressing: whisk together the sugar, brown sugar, ground mustard, pepper, celery salt, vegetable oil and cider in a small bowl. Pour over the cabbage mixture and toss together. Allow this to sit for 2 hours before serving.
Garlic Three Cheese Grits
1 1/2 cups quick grits
4 cups milk
1 stick unsalted butter
1 teaspoon minced garlic
1/4 cup Boursin cheese
1 cup sharp cheddar cheese, grated
1 cup mexi cheese blend, grated
1/2 teaspoon salt
1/2 teaspoon pepper
In a large stock pot bring the milk and butter to a simmer. Stir in the grits and continue stirring until the grits begin to thicken. This should take about 5 minutes. Once the grits have thickened stir in the Boursin cheese, both cheeses, salt and pepper. Stir till melted and serve as a side dish.
*I serve this with sliced brisket over the top with a drizzle of BBQ sauce.
