Summertime means eating lighter and enjoying the bounties that are gardens are providing! I love this hearty salad! Perfect for a quick dinner and hearty enough to make the guys you love leave satisfied with a full belly!
Orzo Salad w/Arugula and Spinach
2 cups arugula
3 cups spinach
1 cup whole wheat cooked orzo
1/4 cup chopped sun dried tomatoes
2 tablespoon oil from sundries tomatoes
1/4 cup olive oil
3 tablespoon apple cider vinegar
2 tablespoon agave nectar
Juice of 1 lemon
Garbanzo beans
Almonds
Sliced rotisserie chicken breast
On a large platter spread spinach, arugula and orzo. Top with garbanzo beans, sundries tomatoes and sliced chicken.
To make dressing: in a mason jar shake together the lemon juice, sundries tomato oil, olive oil and cider vinegar. Add in agave and salt to taste. Shake and drizzle salad with oil.
Southern Corn Pudding
5 eggs
2 1/2 cups fresh corn
1 can creamed corn
1 1/3 cups milk
1 1/3 cups heavy cream
2 tablespoon
Generous 1/3 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 375 degrees F. Spray a 9×13 baking dish and set aside.
In a large bowl, whisk eggs together with whipping cream, milk, salt, baking powder and flour. Stir in sweet corn and creamed. Cook for 1 hour until it is golden brown and slightly puffed up on the top. Serve immediately
