Summer Munch
1 bag of pretzels
2 cups cashew and peanuts
3 cups goldfish crackers
3/4 cup canola oil
2 tablespoon lemon pepper
1 tablespoon dried dill
1 teaspoon garlic powder
1 teaspoon dried chipotle pepper blend or cayenne (adjust according to your liking)Preheat oven to 200 degrees. Place all of the dry ingredients in a large Ziploc bag. In a small bowl whisk together the canola oil, lemon pepper, garlic powder and chipotle blend. Pour the seasoning over the crackers and seal the bag before tossing together. Once the crackers are all coated, place them on a parchment lined baking sheet and cook for one hour. Occasionally tossing them to ensure even toasting. Remove from the oven and enjoy!
Chocolate Peanut Butter Frozen Bananas
4 bananas, cut in half
8 wooden skewers
2 cups semi sweet or milk chocolate chips
2 tablespoon creamy peanut butter
Chopped almonds
Line a baking sheet with parchment paper. Place a banana on a skewer and lay on the baking sheet. Freeze the bananas for 2-3 hours to harden. To prepare the chocolate dip: melt the chocolate chips in the microwave on low till smooth. Stir in the peanut butter and then pour the chocolate dip into a pint sized mason jar. Dip each frozen banana into the chocolate and then roll in chopped almonds. Place the bananas in the freezer to freeze. Enjoy!
Frozen Fruit Pops
1 1/2 cups watermelon
1 cup blueberries
1 cup fresh pineapple cubes
1 cup strawberries
1 kimi, sliced
1 mango, sliced
1 cup Greek vanilla yogurt
1/2 cup pineapple juice
small plastic cups
plastic spoons
In a large bowl place all of the fruit. Using a potato masher, crush the fruit. Stir in the vanilla yogurt and pineapple juice. Using a ladle, pour the fruit mixture into the cups and then place a spoon in the center. Put the cups in the freezer to freeze till solid. To remove from the cups simply run warm water over the outside of the cup and it should pop right out!
Cheeseburger Personal Pizza
1 package sandwich flats
1/4 cup ketchup
1-2 tablespoon yellow mustard
1 pound hamburger, browned
1/2 onion, chopped
1 teaspoon seasoning salt
2 cups cheddar cheese, grated
2 tablespoon dill pickle relish
Preheat oven to 350 degrees. Brown the ground beef and onion together. Add the seasoning salt and pickles. Set meat aside. In a small bowl mix together the ketchup and mustard. Spread the ketchup mixture over 1/2 of the sandwich flat. Top with browned meat and sprinkle with cheese. Place on a parchment lined baking sheet and toast in the oven or toaster oven till the cheese is melted. Remove from the oven and allow the pizza to cool slightly before eating.
