Monday I focused on all of the sweets that apples make! But have you ever tried them in savory dishes? You will shocked at how versatile an apple can be in a salad or with a main dish. Today’s recipe is a busy mom’s way of getting a delicious meal on the table without a whole lot of fuss. Between Jackson’s football/school plus Caytie’s theatre, 2 sports and social life we are chasing our tails around here. So, I am being honest that sometimes cooking a weeknight meal is a challenge. The slow cooker is my very best friend! This dinner is so delicious and comes together really quickly!
Apple Jack BBQ Chicken Sandwiches
4 boneless skinless chicken breasts
4 strips of bacon
1 teaspoon seasoning salt
2 Granny Smith apples, grated
1/4 cup Jack Daniels Bourbon or Apple Cider
1 cup barbecue sauce
hamburger buns
Sprinkle chicken breasts with seasoning salt and wrap each breast with bacon. Place each chickent breast in the bottom of a slow cooker bowl. Pour bourbon or apple cider over the chicken and then top with grated apple and barbecue sauce. Cook on LOW for 6 hours. To serve: Remove the chicken breasts from the slow cooker and shred with a fork. Return the chicken to the slow cooker and toss with the pan drippings and additional BBQ sauce if needed. Place on a hamburger bun and serve with apple slaw!
Apple Slaw
1 package coleslaw mix
1 Granny Smith Apple, cut into thin matchsticks
juice of 1/2 lime
1 red pepper, diced
1/2 red onion, diced
1/2 cup mayonnaise
2 tablespoons honey
1 tablespoon dijon mustard
2 teaspoon apple cider vinegar
salt to taste
In a large bowl combine the coleslaw mix, apple, red pepper and red onion. Sprinkle the veggies and apple with lime juice and toss together. Then in a small bowl whisk together the mayonnaise, maple syrup, dijon mustard, vinegar and salt. Pour the sauce over the slaw and toss together. Chill for 2 hours before serving.
