Recently, I had the kids compete in my version of Iron Chef. As I unveiled the secret ingredient, BROCCOLI, I heard groans and then cheers! Jackson was fired up to make his version of the Louie’s Grill and Bar broccoli salad that they serve as a side dish. I told him I do not know the recipe. So, he wrote down what he thought it had in it and then what the dressing tasted like. I have to say he got pretty darn close. It is not exact but it is a pretty good fake out! There is truly no better compliment to a restaurant than when you serve a salad that a 12 year old boy tries to recreate! I love Louie’s because they serve things that the whole family loves! This is just one of many things we all enjoy!
Jackson’s Festive Broccoli Salad
Summary: This is inspired by Louie’s broccoli salad!
- 3 cups of broccoli florets, chopped into small bites)
- 8 slices bacon, crumbled
- 1/2 cup red onion, chopped
- 1/2 cup golden raisins
- 3/4 cup grated sharp cheese
- 1/4 cup sunflower seeds
- 1/2 cup cherry tomatoes, cut in half
- 1 cup mayonnaise
- 1/4 cup sugar
- 2 tablespoon cider vinegar
- salt and pepper
- In a large bowl place broccoli, bacon, red onion, raisins, sharp cheese, sunflower seeds and cherry tomatoes. In a small bowl mix together the mayonnaise, sugar, vinegar, salt and pepper. Pour dressing over veggie mixture and toss till everything is coated. Serve!
