Dinner time seems to be a daunting task when you have kids all over the place at this or that. Not to mention trying to have the time to COOK! Now, I am not here to shame you on this but I am here to give you some ideas on easy meals anyone can do lickity split! (that is my Mom’s term for super fast)
Pork Tenderloin with Sweet Pepper Thai Coleslaw Sandwiches
1 pork tenderloin
1/4 cup champagne vinaigrette
1 package cole slaw mix
2 tablespoons sweet thai chili sauce
1/2 cup mayonnaise
salt and pepper
hamburger buns
Place the pork tenderloin in a ziploc bag and cover with champagne vinaigrette. Allow the pork to sit in the fridge overnight or for at least an hour. Grill the pork till it is medium well. While the pork is cooking mix the coleslaw mix with the mayonnaise and sheet thai chili sauce in a medium sized bowl. Add salt and pepper to taste. Allow this to sit till pork is done. Once the pork is done cooking, allow it to sit and rest for at least 10 minutes before slicing. To make the sandwiches, slice the pork and place on the bun. Then top the pork with the slaw and serve!
Quick Sweet and Sour Chicken
1 package chicken nuggets or popcorn chicken, cooked according to package
1 cup fresh pineapple chunks
1 green sweet pepper, cut into large chunks
1 red pepper, cut into large chunks
¼ cup vinegar
3 tablespoons agave nectar
2 tablespoons cornstarch
2 tablespoons soy sauce
1/4 cup chicken broth
4 cups cooked jasmine or white rice
Cook the chicken according to package instructions. While chicken is cooking, saute the peppers and pineapple just till tender in a skillet. Add in the vinegar, agave nectar, and soy sauce. In a small cup mix together the chicken broth and cornstarch till smooth. Pour into the sauce pan and cook till thickened. Toss the nuggets in the sauce till coated and serve over warm rice.
3 cups cooked chicken, chopped
1 cup sour cream
1 can cream of chicken soup
1/4 cup chopped green chilis
1 red pepper, chopped
1 onion, minced
1 cup black beans, rinsed and drained
2 cups cheddar cheese, shredded
1/2 tsp. garlic powder
1 medium sized bag of nacho cheese Doritos, crushed
Preheat oven to 350 degrees.
Lightly spray a 9×13 pan with cooking spray. Spread the bottom of the pan with half of the crushed Doritos. Save half of the cheese. In a large bowl, Mix together the remaining ingredients. Pour the creamy chicken mixture over the Doritos. Sprinkle the casserole with the remaining cheese and Doritos. Bake 30 minutes or until bubbly.
