Not all of us are living the domesticated perfection that we all strive for! I am also chasing my tail around many days. But it never fails that as I tuck my kids into bed, one of them will say, “Hey, I volunteered to bring cookies to class tomorrow!” Well, that is awesome except I am out of everything…no chocolate chips, nuts or goodies. But I do have some Jello or a cake mix! Boom! Cookies are possible.
The fun thing with Jello Cookies is that they come in bright bright colors. The flavor of the cookie is the flavor of the Jello. That simple!
Jello Cookies
Jello flavor of your choice, 4 ounce box
3/4 cup Braum’s unsalted butter, softened
1/2 cup sugar
2 large eggs
1 teaspoon vanilla paste or extract
2 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking powder
Colored sugar crystals
Preheat oven to 350 degrees and line a baking sheet with parchment paper.In a mixing bowl or using a stand mixer whip the butter, sugar and jello together till light and fluffy. Add the eggs and beat well. In a medium sized bowl combine the dry ingredients. Slowly add the dry to the wet and mix till combined. Roll into 2 inch balls and roll in colored sugar. Bake for 7-8 minutes. Remove from bang sheet to cool.
1 yellow cake mix
1/4 cup vegetable oil
2 eggs
1/2 cup sugar
1 tablespoon + 1 teaspoon cinnamon
1 tub vanilla frosting
Preheat oven to 350 degrees. In a mixing bowl beat together the yellow cake mix, vegetable oil, and eggs. Make 2 inch balls and roll them in the cinnamon sugar. Place on a baking sheet and bake for 8 minutes. Frost the cookies by adding 1 teaspoon of vanilla to the frosting.
