Every year we travel to Florida during the holiday season to spend time on the boat. We happen to dock it in a predominantly Jewish area. That means tons of Jewish deli’s. Before they closed, The Rascal House, was where we would go on Christmas morning for rugelach’s and matzo ball soup. I love the soup but the kids LOVED the pastries. For years, I have wanted to learn to make these delicate pastries that the Rascal House served by the basketful! Thankfully with a little research and my new KitchenAid 13-cup ExactSlice™ Food Processor I am ready for rugelach baking!
Before I start my recipe I have to tell you about the workhorse that will make this recipe a breeze. The NEW KitchenAid 13-cup ExactSlice Food Processor is simply “BEAST” as my kids would say, in my kitchen.
Here are the things I have most thankful for in my new Kitchen Aid ExactSliceFood Processor:
- Adjustable blades (ExactaSlice system)- Thank goodness the engineer gods at KitchenAid listened to my prayers! Exactslice is just what I had wished for. Now I can adjust the width of my cuts with a simple lever. No more taking blades in and out trying to find the right thickness for my slaw!
- Big Bowl- Finally a bowl that I can mix double batches of my recipes! 13 cups and so easy to use.
- Smooth Mixing- I have to say that I was really impressed at how strong this machine was at mixing the rugelach dough yet quiet at the same time. My older processor (not a KA) is loud and sounds like a wood chipper! Not this baby.
- Easy clean finish- The stainless finish is superb. It is not shiny and hard to keep clean. I really love it! Finally stainless finish that looks good and not able to be smudged.
- Large Feeding Tube- I just about giggled when I saw how much easier it was to blend a tomato. Finally I can fit an entire something down the tube! It adjusts to 3 different sizes so adding foods is so much better! Grating and shredding cheese is a breeze. No ma’am to buying to the bags of cheese because Mama has a new KitchenAid!
All this talk about my new food processor has got me giddy to share my rugelach recipe. In honor of my Mama, I made Almond Apricot Rugelach’s. I still have have her food processor from the 80’s until Kitchen Aid was kind enough to let me keep this little lover! So the harvest gold beauty is going to move over because there is a new hot rod KitchenAid ExactSlice food processor in the HOUSE!
Almond Apricot Rugelach
- 1 cup chopped almonds
- 2 1/4 cups all-purpose flour
- 1 cup butter, cut into pieces
- 1 (8-oz.) package cream cheese, cut into pieces
- 1 teaspoon vanilla paste
- 1/2 teaspoon kosher salt
- 1 (12-oz.) jar apricot preserves
- Parchment paper
- 3 tablespoons sugar
- 2 teaspoons ground cinnamon
- Preheat oven to 350°. Bake almonds in a single layer in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through. Increase oven temperature to 375°.
- Pulse flour and next 3 ingredients in a food processor 3 or 4 times until dough forms a small ball and leaves sides of bowl. Divide dough into 8 portions, shaping each portion into a ball. Wrap each ball separately in plastic wrap, and chill 1 to 24 hours.
- Heat preserves in a small saucepan over medium heat, stirring often, 2 to 3 minutes or until warm.
- Roll 1 dough ball into an 8-inch circle on a lightly floured surface. Brush dough with 1 to 2 Tbsp. warm preserves. Sprinkle 2 Tbsp. pecans over preserves on dough. Cut circle into 8 wedges, and roll up wedges, starting at wide end, to form a crescent shape. Place, point sides down, on a lightly greased parchment paper-lined baking sheet. Repeat procedure with remaining dough balls, preserves, and almonds.
- Combine sugar and cinnamon; sprinkle over crescents.
- Bake at 375° for 15 to 20 minutes or until golden. Remove from baking sheets, and transfer to wire racks. Cool completely (about 20 minutes) Yield: 5 dozen

Whole Wheat Pastry Crust
Traditional pie crusts are made with one-half cup or more of butter, lard,
or shortening per crust. This crust not only contains half the traditional
crust’s fat but the fat of choice is polyunsaturated margarine. Another
bonus: This crust is made with vitamin- and fiber-rich whole wheat flour.
A splash of almond extract and a sprinkle of sugar round out the crusts
hearty whole grain flavor.
y i e l d : 9-inch pie crust s e r v i n g s : 8
s e r v i n g s i z e : one-eighth crust
Combine flour, sugar, salt, and baking powder in a small bowl. Mix well.
Cut margarine into flour with a pastry blender or two knives until mixture
resembles coarse crumbs.
Slowly add water, vinegar, and almond extract, tossing with a fork until
flour is moistened without being wet. If mixture seems dry or crumbly,
sprinkle in 1 teaspoon cold water. The dough should not be damp or sticky.
Gently press dough into a flattened round. Chill at least 30 minutes for
ease in handling.
Roll dough with a rolling pin between two sheets of parchment paper
or wax paper or on a lightly floured work surface into 10H-inch round of
even thickness (about J inch). Fit dough round into a 9-inch pie pan. Fold
edges over pan and flute crust, if desired.
For unbaked crust: Do not prick crust. Pour fillings into crust. Bake as directed
in recipes.
For baked crust: With a fork, lightly prick crust’s bottom, sides, and
where sides and bottom meet. Bake in 400 degree F oven until golden
brown, or about 10 minutes.

Whole wheat pastry flour or whole wheat flour 4 oz. scant 1 c
Granulated sugar 2 tsp
Salt 1/4 tsp
Baking powder 1/4 tsp
Stick margarine, chilled 2 oz. 1/4 cup
Very cold water 1 1/2 Tbsp
Distilled vinegar 2 tsp
Almond extract 1/4 tsp

I’ve been needing a good food processor, never had one, and didn’t know what kind is the best. I love Kitchen Aid. Thanks for the demonstration on tv and the chance for getting one. I would make homemade salsa. I like to put up lots when I have a good crop of tomatoes. All my grandkids love it and it takes time to cut up all the ingredients. I would also make pie crusts. I have never been able to make a good pie crust and my husband would love this.

If I were to win this Kitchen aid I could use it for multiple jobs but first and foremost I would use it to slice up veggies and other ingredients for soups and stews. My husband has esophageal cancer and he has trouble swallowing whole foods so this would be the main reason I’d like to own a kitchenaid but also I love cooking and baking and I’d use this little work horse until it would no longer gitty up and go!
