It is pre-game preparation time for the Super Bowl at my house. If you ask me who is playing, I do not have a clue. However if you ask me what I am serving for my Super Bowl Party then I can give you the whole thing. I love Super Bowl because this is when I break out all of my man loving favorites and make them for one big day! My guys love this day. It is all about protein, carbs and eating all day long! No wonder my son falls asleep before half time every year. He has eaten himself into a coma.
Frito Chili Pie Pizza
1 pre-made pie crust (I buy mine from my local pizza shop)
1 package Schwab’s Chili
2 cups cheddar cheese blend
2 cups Frito chips, crushed
1 teaspoon corn meal
lettuce
tomatoes
red onion
salsa
Preheat oven to 425 degrees. Preheat your pizza stone in the oven as the oven is coming to temp. This makes for a crunchy bottom.
On a well floured surface roll out pizza dough till it is 12 inch diameter. Spread with chili, top with Fritos and sprinkle with cheese. Remove hot pizza stone from oven and sprinkle with the corn meal. Lay crust on stone and spread with chili, top with Fritos and sprinkle with cheese. Place in hot oven and bake for 15 minutes or until crust is golden brown. Remove from oven. Top with lettuce, tomatoes, red onion and salsa.
Pizza Roll-ups
1 package crescent rolls
1 package peppersoni slices
6 mozzarella cheese sticks
1 stick of butter
1 teaspoon garlic powder
1 teaspoon italian herbs
2 tablespoon parmesan cheese
Marinara sauce
Preheat oven to 350 degrees. Roll out the crescent dough making sure to separate the triangles. At the widest point of the triangle place 5-6 pepperoni slices, 1/2 of a mozzarella stick and then roll from the widest point to the end. Place seam side down on a parchment lined cookie sheet. Continue till all of the creascents are done. Place in the oven and bake for 10-15 minutes or until rolls are golden brown. While they are cooking meltĀ 1 stick of butter with the garlic powder, italian herbs. Add in the parmesan cheese. Brush over warm rolls and serve with marinara sauce for dipping. Just a warning you…these will fly off of the plate so make sure and make a couple batches!
