Here is what I promised yesterday…My favorite movie star worthy popcorn recipes. I love to make these whenever we are having a big party because you can make tons! It looks magnificent and the cost is super economical. Sounds like a perfect treat to serve. After all, who does not love popcorn and the movies??
So here are my Oscar worthy recipes!
Each of these recipes starts with this basic caramel corn recipe you make in the microwave with a paper sack.
Caramel Corn
4-5 quarts popcorn, popped (do not use microwave popcorn)
1 cup brown sugar
1⁄2 cup margarine or unsalted butter
1⁄4 cup dark corn syrup
1 1⁄2 teaspoon salt
1⁄2 teaspoon baking soda
Directions:
Place already popped popcorn into a paper sack. In a 2 quart bowl, microwave butter, brown sugar, corn syrup and salt on High for 2 1⁄2 minutes. Carefully remove from microwave and stir in
baking soda. It will turn a caramel color. While sugar is hot pour over the popcorn while it is in the sack. Stir to evenly coat all of the kernals. Fold top of bag down and place in microwave. Heat for 4 minutes on HIGH. Every minute stop and shake but then return to heat. Once done, immediately pour out on cookie sheets to cool.
Peanut Butter Fudge Popcorn
1 full recipe of caramel corn
1 bag Wilton Dark Chocolate candy melts
2 tablespoon creamy peanut butter
In a medium sized bowl, melt candy melts according to package instructions in microwave. Once melted add peanut butter and stir till well combined. Drizzle over cooled caramel corn. Allow chocolate to harden and serve.
1 Full recipe of caramel corn (see instructions)
1 cup unsalted cashews
1 cup unsalted almonds
1 bag Wilton white chocolate candy melts
2 tablespoon almond paste
Before cooking caramel corn in microwave add cashews and almonds. Allow to cool on large cookie sheets or parchment paper.
In a medium sized bowl, melt candy melts according to package instructions in microwave. Once melted add almond paste and stir till well combined. Drizzle over cooled caramel corn. Allow chocolate to harden and serve.
