For the past 5 days, if you follow me on Instagram or FB then you know I have been recuperating from surgery. You see, I began this health journey 6 weeks ago and not till they finally found a cyst on my ankle did they know what might be causing all the swelling. I have seen no less than 10 doctors in 6 weeks, had countless blood tests and now surgery to remove this darn mass. Well, I am doing great. Except that I have had to lay in bed with my foot up now for almost a week. (I laughed when they told me this is what I would have to do….For gosh sake, I was vacuuming 2 days after a cesarean.) The doctors are right. This hurts and walking on it makes it worse. So here I lay, leg up working on the computer. But, what I was able to do was instruct the kids on how to make my favorite vanilla bean fluffy waffles. Then I sent the hubby to Cain’s for the chicken. And voila! Chicken and Waffles! Here is my simple waffle batter. It also works great as pancake batter just add more milk more a smoother consistency.
Fluffy Buttermilk Vanilla Bean Waffles
2 cups all-purpose flour
1/2 teaspoon salt
2 tablespoons sugar
1 1/2 teaspoons baking soda
1 3/4 cups buttermilk
2 eggs, separated
1/2 stick unsalted butter melted
1 1/2 teaspoon vanilla paste
In a medium sized bowl, combine the dry ingredients. In another medium bowl using a whisk or electric hand mixer combine together the buttermilk, vanilla paste and the egg yolks. In a separate bowl,beat together the egg whites till soft peaks form. Stir the buttermilk mixture into the dry mixture. Using the whisk or mixer, beat together until no lumps have formed. Pour in the melted milk and beat till smooth. Then fold in the egg whites until incorporated. Pour 1/2 – 3/4 cup of batter into hot waffle iron and cook till crisp.
**To make chicken and waffles- I get Cain’s chicken tenders and use them when I am in a pinch or unable to make my own fresh!Cloud>
