There are some foods that just go together, peanut butter and jelly, bacon and eggs and then the elusive turkey and stuffing. Only problem is that I crave stuffing even when it is not November. So, I decided to accept a challenge from Stove Top to come up with a delicious recipe for stuffing that is not your mama’s turkey type!
Since it is almost summer, I decided to jazz this side dish up by adding fruits and then stuffing a pork tenderloin. Best part was I grilled this pork tenderloin and topped with a bourbon barbecue sauce glaze! I promise when you eat my pork tenderloin you are not thinking…Thanksgiving.
I really encourage you to go to the store and get some Stove Top Stuffing! In fact, how about we have a little contest to see who comes up with the best recipe?? Two things I love to do with Stuffing:
1. Take the stuffing mix, and moisten it so that it’s not juicy, but it’s plenty moist. THEN, I spread it in a casserole dish (ala a crust), then I add my pot pie mixture (that I add cheese to!) and put it in the oven to bake. RIght before it’s done, I top it with mashed potatoes.
2. I spread the stuffing mix in the bottom of a casserole. In a mixing bowl, I mix a dozen eggs, diced ham, peppers, onions, mushrooms and cheese. Pour the egg mixture over the stuffing and bake. I top with additional cheese after about 45 minutes and cook about 15 minutes more… YUM!

Oh! Oh! Oh! Thought of another one: mix stuffing with ground beef, tomato sauce, onions, and basic meatloaf seasonings. Boil green peppers (or any other color for that matter!) after cleaning them out. Add mixture to peppers (half way), sprinkle with shredded mozzarella fill the rest of the way with mixture. Bake for 30 – 35 minutes. TOp with more cheese and bake for 10 minutes more. YUM!
