Here are my go to easy appetizer dips to make for your New Year’s soiree!
Apple Crack
2 packages cream cheese
1/2 cup brown sugar
1 cup caramel dip, in produce section
1/2 cup toffee bits
1/4 cup chopped pecans
apple slices
In a medium sized bowl mix together the cream cheese and brown sugar using an electric mixer till smooth. Place in a serving bowl. Chill for 2 hours. Top with caramel sauce, toffee bits and pecans. Serve with apples or vanilla wafers!
Camelized Onion and Apricot Baked Brie
1 sheet puff pastry, thawed
1 wheel brie
1 onions, sliced thin
1 tablespoon olive oil
1/4 cup apricot preserves
1 egg, beaten
In a large skillet saute onions in olive oil till brown and carmelized. Remove from heat and add in preserves. Stir together until preserves has melted. Set aside.
On a lightly floured board place thawed puff pastry. Roll out till it is double in size. Place brie in the middle of the pastry. Top with the onion/apricot mixture. Fold up the puff pastry over the brie/onions on all sides till it is completely covered. Place the puff pastry on a parchment lined baking sheet. Brush with egg wash. Bake in a 400 degree oven for 20 minutes or until golden brown. Remove from oven and place on a serving plate!
