Some days you wake up and the birds are singing. I started my day sniffling, working on sponsors for my segments on News 9 and then…my phone and email started to blow up! Rachael Ray was on tv featuring my Cuban Pork and Pineapple Tacos on her show! Now that is a pretty good Tuesday.
The Ross family loves Cuban food but in Oklahoma that is hard to find. So, after spending a lot of time in Southern Florida I have learned the art of making a Cuban taco. It is so simple and your family will love it too. The best part is that you can use a pork tenderloin, the slow cooker and mojo marinade to make my incredible tacos. Just slow cook for 4 hours, shred and then serve on corn tortillas with cabbage, pineapple chunks, cilantro and cotija cheese. Super simple and so yummy!
