Pasta has been a staple on tables watching their dollars forever. Just because you are trying to save a bit does not mean you have to sacrifice flavor. It is all about inexpensive flavors supplied by seasonings and easy ingredients. Pasta Puttanesca originates from Italy and their “ladies of the night.” How I explained it on News9, is that these marketing savvy ladies made big bowls of highly seasoned and spicy pasta. Then placed the bowls in their open windows to help entice their clients to stop by.

Pasta Puttanesca
1 package rigatoni noodles, cooked according to package
2 chicken breasts, sliced into thin strips
1 onion, chopped
1 green pepper, chopped
1 tablespoon anchovy paste
1 small can chopped black olives
2 tablespoons garlic, minced
1-2 teaspoon red pepper flakes
1 tablespoon spaghetti seasoning
1 jar spaghetti sauce, your choice
In a large skillet sauté the chicken, onion, green peppers and garlic in olive oil. Once the chicken is cooked through add the anchovy paste, black olives, red pepper flakes, and spaghetti sauce. Allow this to simmer for 10 minutes on medium high heat. Toss with pasta noodles and serve with sprinkled parmesan cheese.
Sweet and Savory Stuffed Pork Tenderloin
1 pork tenderloin, butterflied and flattened
2 1/2 cups seasoned bread stuffing
1/2 onion, chopped
2 celery ribs, chopped
1 apple, chopped into strips
1 cup hot water or chicken broth
1/4 cup chopped pecans
1 1/2 tsp. rubbed sage
1 tsp. minced garlic
1 tsp. thyme leaves
1/2 tsp. allspice
1/2 tsp. paprika
salt and pepper
In a skillet sauté together the onion, celery and apples till tender. In a large bowl combine the bread stuffing, hot water and the sautéed vegetable mixture. Add in all of the spices and stir till combined. Salt and pepper the pork tenderloin. Then place the stuffing down the center of the pork tenderloin and then roll. Use butcher twine to tie closed. Then sear the pork tenderloin in an oven proof skillet on all sides. Then place in a 375 degree oven to finish cooking for 30 minutes. Remove from the oven and allow to cool for 15 minutes before slicing.
