Today I have had the honor to cook at the Oklahoma Grocer Associations Show sharing my love of all things MIO (Made in Oklahoma). As you know I am a HUGE supporter of buying local whenever possible. There are so many incredible products that we make right here in our fabulous state! Here are the recipes that I shared…I hope you love them as much as I do!
Tailgate Bites
1 onion, chopped
2 cloves garlic, chopped
3 tablespoon Suan’s pepper jelly***
1 package Mountain View smoked sausage, minced***
2 lbs ground chuck
2 c fire roasted crushed tomatoes, drained
1/4 cup Head Country BBQ sauce***
1 t Worcestershire sauce
½ t nutmeg
1 t salt
1 t pepper
Place a large skillet on stovetop over medium high heat. Sauté the onion, garlic, jalapeno, red and green peppers until tender. While the veggies are cooking, pulse the smoked sausage in a food processor so it’s minced into small pieces. Remove from processor and add the ground chuck and minced smoked sausage to the veggies and cook until the meat is browned and juices run clear. Drain off the excess fat and return mixture to the stove. Pour in the crushed tomatoes, tomato paste, brown sugar, Worcestershire sauce, nutmeg, salt and pepper. Simmer for 15 minutes. Serve heaping spoonfuls of meat mixture on the buns.
Hawaiian Jalapeno Pops
sliced bruschetta bread
Schwab’s jalapeno cheddar dogs, grilled and sliced thin***
Garden Club Pineapple jam***
1/2 cup Griffin’s mayonnaise***
coleslaw mix
In a large bowl combine the mayonnaise and pineapple jam with the coleslaw mix. Allow to sit for about 15 minutes before serving.
Serve grilled sliced jalapeno cheddar sausages on sliced bread and then topped with a fresh slaw.
German Chocolate Brownies
Preheat oven to 350 degrees. Spray a metal 9×13 pan with non stick cooking spray and set aside. Take the thawed pie and cut the entire thing into small squares and set aside!
Melt the butter and chocolate chunks in a medium saucepan over low heat. Stir until fully melted.
In a large bowl mix together whisk together the sugar and eggs till creamy. Using an electric hand mixer for this part, beat in the chocolate mixture, half and half along with 1/2 of the pie pieces. Beat until everything is well blended. Add in the flour, baking powder and vanilla. Only mix till combined! Too much mixing makes for a less chewy brownie. Stir in the rest of the pie pieces. Stir to coat and incorporate.
Pour the brownie batter into the prepared 9×13 pan. Bake for 45-50 minutes. Cool and then cut.
Not Your Mama’s Sausage Balls
1 pound JC Potter sausage**
3 packages Shawnee Mills biscuit mix**
4 cups sharp cheese
1/2 cup Suan’s Onion Jam**
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. In a large bowl mix together the sausage, biscuit mix, sharp cheese and onion jam till well combined. Take teaspoons of batter and roll into a ball and place on the baking sheet. Allow 1/2 inch separation between the sausage balls. Bake for 12-15 minutes or until brown. Remove from oven and serve!
