Sometimes you just can’t sleep and then your stomach gets to growling and that means one thing. Pancakes! I love to make pancakes. As a kid I was raised in a home that loved Bisquick. Now there is nothing wrong with good ol Bisquick but now I make my own from scratch. While in college I realized you may not have Bisquick on hand but usually you do have all the makings of a pancake batter. So, here is my recipe. If I am really trying to be an over achiever Mom many times I will do pancake bar for my kids and their friends after a sleepover. I am famous for my banana split pancakes! (chocolate chips, pecans, bananas)
Pancake Batter
1 1/2 cups all purpose flour
3 tablespoons sugar
1 3/4 tablespoons baking powder
1 teaspoon salt
1 1/2 cups milk
2 eggs, beaten
1/2 teaspoon vanilla paste
3 tablespoons, melted butter
Mix all of this together and whala!! Yummo pancakes!
