Every year my family kicks off the summer with a trip to the lake with family friends. We do a lot of laughing, swimming, fishing and of course eating!
Oatmeal Chocolate Chip Warm Cookie Sundae
1 cup unsalted butter, at room temperature
1 cup brown sugar
1/2 cup sugar
2 large eggs
1 tablespoon vanilla
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 cups all purpose flour
1 cup quick oats
1 package semi sweet chocolate chips
1/2 cup bittersweet chocolate chips

Preheat oven to 325 degrees. In a large bowl beat together the butter and sugars till light and creamy. Beat in the eggs and vanilla. In another bowl combine all of the dry ingredients except for the chocolate chips. Slowly mix in the dry ingredients to the butter mixture until it is all incorporated. Stir in the chocolate chips. Press the cookie dough into the bottom of a well seasoned cast iron pan. Bake for 20 minutes or until the cookie is golden brown. Serve with vanilla ice cream on top of the warm cookie in the cast iron pan. Place it on the table and eat with a spoon.
No Bake Smores Cheesecake in a Jar
1 cup crushed graham cracker crumbs
1/2 cup sugar, divided
1/4 cup melted unsalted butter
1 package cream cheese, room temperature
1 1/2 cups Cool Whip
1 cup mini chocolate chips
graham crackers
mini marshmallows
1 Hershey bar
Place the graham cracker crumbs in a small bowl. Pour in the melted butter and 1/4 cup sugar and stir till well combined. In a medium sized bowl beat together the cream cheese and 1/4 cup of sugar till smooth and creamy. Fold in the Cool Whip. Stir in the chocolate chips. Press 1/4 cup of graham cracker crumbs into the bottom of a small jar. Spoon the cream cheese mixture on top and spread to cover. Place the top of the jar on and allow this to chill for at least 3 hours. Before serving remove the lid, add a dollop of cool whip and top with a Hershey chocolate square and sprinkling of graham cracker crumbs.
