Do you ever have those days when 5 o’clock rolls around and you simply have no urge to get in the kitchen? When a nap with your favorite kitty sounds like a better idea….Well, believe it or not, I do! Many people think that I am always whipping up a 4 course meal and looking like June Cleaver. Well, that my friends is a myth. Not my reality nor anyone else’s for that matter. (Here is me and Bella….trying to hide from the kids yesterday at 5pm)Anyway, is a super simple dinner you can throw together in a matter of minutes. Pitch it in the oven and Voila…Dinner is served!
LAZY DINNER
1 Smoked Sausage, cut in half length wise and then into 2 inch pieces
1 1/2 pound red potatoes
1 sweet potato, peeled and cut into wedges
1 pound baby carrots, cut in half
1 large red onion, cut into wedges
4 tbsp oil
1/2 tsp. red pepper flakes, optional
2 small garlic cloves
3 tsp Sassy Mama dried ranch mix
salt & pepper
Preheat oven to 400 degrees. To make drizzle sauce: Combine oil, jalapeño, garlic cloves, ranch mix and salt/pepper. Pulse till paste is formed.
In a large bowl combine red potatoes, baby carrots, red onion, parsnips, sweet potato. Drizzle with sauce and toss till well combined. Place in a well greased 9×13 baking pan. Place sausage on top and sprinkle with 1/2 teaspoon of dried ranch mix. Bake for 30 minutes. Turn sausages after 15 minutes. Continue to cook until veggies and potatoes are tender.
Sassy Ranch Mix
8 tsp. dried minced onion
1 T. dried parsley flakes
1 tsp. paprika
2 tsp. sugar
2 tsp. salt
2 tsp. pepper
1 1/2 tsp. garlic powder
In a small bowl, combine the first seven ingredients. Store in an airtight container in a cool, dry place for up to one year. I store mine in a mason jar.
Now that you have totally kicked dinner out…now they are asking about dessert. How about my knock off of the Spizookie! I like to call it:
Momzookie
1 roll of refrigerated sugar cookie dough
1 roll of chocolate chip cookie dough
6 fun size candy bars, crumbled
1 cup pecans, chopped
vanilla ice cream
Preheat oven to 375 degrees. In a large cast iron pan, press the sugar cookie dough into the bottom. Sprinkle with left over candy/pecans and then place dollops of the chocolate chip cookie dough all over the top. Bake for 25 minutes or until golden brown. Cut into wedges while warm and top with a scoop of ice cream!
