I should have been more mentally prepared for it but this rainy dark day has hit me like a ton of bricks. Maybe it is only the chilly, damp dark day or maybe it is because today is the last day of 38 for me. I am not going to lie…I do not want to turn 39. Because very simply…then I am 40. I know age is only a state of mind but if I am 100% honest…I fear that since my Mom died at 56 I think of myself as “on the clock.” I know I should not ; but I do.
So to escape this sad sick feeling I am going to bake. These are my favorite cookies at Dara Marie’s Bakery here in Norman. I have of course figured out the recipe and make them here at the casa when I am blue. Now as my gift to you….and everyone you love!
Chocolate Chip Pecan Coconut Cookies
Makes 4 dozen large cookies
2 sticks unsalted butter, softened
1 cup sugar
1 cup packed light brown sugar
2 teaspoons vanilla extract
3 large eggs
3 cups all-purpose flour
1 teaspoon baking soda
Pinch of sea salt
24 ounces semi-sweet chocolate chips
2 cups toasted chopped pecans (yes, toast them and I like big chunks!)
1 cup shredded coconut
Preheat the oven to 325°F
In a mixer cream the butter and sugars until fluffy. Add the vanilla and eggs and beat until smooth. In a small bowl combine the flour, baking soda, and salt. Slowly add the dry ingredients to the mixer, beating on low until blended. Pour in the chocolate, pecans, and coconut. Fold them in by hand with a spatula. Chill the dough for 30 minutes.Using an ice cream scoop, drop the dough onto a well greased baking sheet. Bake for 12-15 minutes until lightly browned on the edges and cooked in the center. Cool on a rack.
