If you are alive, have a middle school child or older and also watch tv then you know The Hunger Games is coming out tomorrow to a theatre near you! My son read this series over a year ago and encouraged me to do the same. So, I picked them up and got to reading them. I have to say the subject matter is REALLY DARK however the message by the end of the series is a needed thought on society. Ok… Sorry to start sounding so uppity but I liked the message. Just not the violence…
So, in honor of Katniss, Gale and Peeta I have created a dish that you can forage for and feel like one of the tributes! Simply delicious!!!
Dandelion Greens Salad
1 cup dandelion greens, well-washed and spun dry
2 thick cut applewood smoked bacon slices, cut into small strips
2 tbsp cider or sherry vinegar
1 tsp dijon mustard
1 tsp sugar
Salt and pepper
1 hard cooked egg, sliced
1/4 sweet onion, sliced very thinly on a mandolin If possible
1/4 cup pumpkin seeds, toasted
Cook the bacon until crisp, then remove the bacon pieces. Turn the heat off and add the vinegar, mustard and sugar to the bacon drippings, stir with a whisk and add a little salt and pepper. Taste and adjust seasoning as necessary. Toss the greens in the hot dressing and place them on a plate. Top with the egg, pumpkin seeds and sweet onions. YUM!
