I woke up this morning feeling more exhausted than when I went to sleep. Then I got to thinking…what did you have for dinner last night? Ohhhh…..a christmas cookie. That might be part of the reason. Not to mention when I reflected on dinners for the past week they were not a heck of a lot better. Seems like we are all just trying to MAKE IT to Christmas. Well, I am not doing it anymore. I know God never intended us to be like this. So, I am going to exhale and make a healthy hearty dinner for my family tonight! Here is what I have whipped up!
Roasted Pork Tenderloin with Apricot Chutney
1 pork tenderloin
1 onion, chopped
2 apples, chopped
1/2 cup Garden Club apricot jam
salt and pepper
2 tablespoon rosemary (fresh or dried)
1/2 cup apple juice
Preheat oven to 375 degrees. In a large oven proof stock pot sauté the onion in olive oil till tender. Prepare the pork tenderloin with salt and pepper and then sear the pork in the pan on all sides. Once it is browned on all sides, add the apples to the pot as well as spread the apricot jam over the pork. Sprinkle with rosemary and then add the apple juice. Cover with foil or an oven proof lid and place in the oven to finish cooking for 45 minutes. Remove from the oven and allow the pork to rest. Place on a platter and top with juices and chutney let over in the pan.
Hey have you ever eaten pomegranates? They are a super food. Super sweet and full of heart healthy antioxidents! I was inspired recently by my friend, Liz, when I was over at her house and she had a big bowl of seeds chilled. Her daughter was sitting in front of the tv just munching along. So much better than chips! They are totally addictive!!! I encourage you to give this winter fruit a try!
Holiday Cous Cous Salad
1 box pearled cous cous, prepared according to package
2 cups butternut squash, chopped
1 bunch swiss chard, chopped
1/2 cup pomegranate seeds
olive oil
salt and pepper
In a saute pan over medium heat sauté the butternut squash with the swiss chard till tender. Add salt and pepper as needed. Once it is tender toss with cous cous. Sprinkle with pomegranate seeds and serve!
