This may be one of my favorite holidays.
As a kid growing up we always went to Bob and Diane’s house to shoot fireworks and celebrate Bob’s birthday!
It was the one time a year that I remember my Dad acting like a kid. Usually he was so stern and to himself but I guess the thought of blowing rockets and exploding things in air made him reach out to his children. What fun we had!!
Next best thing was all the food! We would cookout, swim and just have fun.
If you need a yummy dish to bring today, try this one. It is my Aunt Jeanie Jean’s family recipe. I call it The Shaw Slaw (in honor of my awesome Uncle Phil Shaw..JJ’s hubby!)
Here is the recipe:
Shaw Slaw
5 cups cabbage, shredded
1 1/2 cup dried cranberries
1/2 cup green onion, chopped
1/2 cup green pepper,chopped
Dressing:
1/2 cup mayonnaise
1 tablespoon sweet pickle relish
1 tablespoon honey mustard
1 tablespoon honey
salt and pepper to taste
Mix together all of the veggies and cranberries in a large bowl. Then in a smaller bowl whisk together the mayo, honey, honey mustard, relish, salt and pepper. Spoon over cabbage mixture and toss till coated. Cover and chill, at least 2 hours!
