I am happy to say that I love Kosher foods! Hanukkah is a wonderful sacred holiday that I have learned to appreciate and love. My family spends our Christmas every year in the Aventura, Fl area. This is a predominately Jewish area is south Florida. We have made so many friends and through those friendships I have been able to show my children other families traditions!
Here are a few of my favorites. Of course I have had to jazz them up a bit. However I have tried to follow the customs.
Sweet Potato Latke
2 baking potatoes, grated
1 sweet potato, grated
1/4 cup green onion chopped
1/4 cup Italian bread crumbs
1 teaspoon thyme
3 tbsp. flour
3 tablespoon butter
3 large eggs, beaten
olive oil
Salt
Grate all of the potatoes on a box grater. Allow potatoes to drain in a colander. Place in a bowl and mix in the green onions, italian bread crumbs, flour, thyme and salt. . Stir in the eggs.
Preheat oven to 375 degrees. In a large skillet place 1/4 inch of olive oil and butter in the bottom of pan and heat. Using a large cookie scoop place large scoop into hot oil and flatten to pancake size. Cook till browned on each side. Place cooked latke on paper towel lined plate and place into hot oven for 15-20 minutes. Serve with sour cream and homemade applesauce.
Chocolate Macaroon
1 package of shredded coconut
1 can of sweetened condensed milk
1 teaspoon pure vanilla paste
1/2 teaspoon almond extract
3 egg whites
1/4 teaspoon kosher salt
1 package chocolate chips
1 teaspoon butter
Preheat the oven to 325 degrees. Combine the coconut, sweetened condensed milk, and vanilla paste in a large bowl. Beat the egg whites till they form peaks. Fold in the coconut mixture to the egg whites. Using a cookie scoop place on a parchment lined baking sheet. Bake for 30 minutes or until they are golden brown. Allow to cool.
Melt chocolate in the microwave till smooth. Stir in the butter. Dip the tops of the macaroons into the chocolate. Allow to set. Serve~
