If you have been following my misadventures so far in 2013 then you have seen that I am determined to get a little healthier. Now, I am not here to tell you that I am swearing off butter and whipped cream. I love them both but I need to use them in moderation! However there are many shortcuts I can do to make my comfort favorites with less guilt!
Fettucini Alfredo is a nemesis to many people when they are trying to cut back. It is a rich butter, cream and cheese sauce served over noodles. It will literally stick to your ribs but if you are me it will stick right to your bootie! So, many people just avoid it. I however do not like to be told “no” so I had to figure out how to make this dish “bootie friendly”! It took a couple of tries but I think I have it down….
Ingredients
- 1 package whole wheat fettucini, cooked according to package
- 4 chicken breasts, grilled or roasted
- 3 garlic cloves, chopped
- 1 tablespoon unsalted butter
- 1/4 cup non fat greek yogurt
- 7 low fat laughing cow cheese wedges
- 1/2 cup grated Parmesan cheese
- 1 cup chicken stock
- 1-2 tablespoon cornstarch
- salt and pepper
Instructions
- Saute garlic in butter till tender. Add in the greek yogurt and laughing cow cheese. Stir in the Parmesan cheese. Cook till melted. In a small bowl combine the broth and chicken stock. Stir into the cheese and cook till thick. Add salt and pepper to taste. Serve over pasta and with grilled chicken.
