If you are anything like me then you probably have tons of spices. Anytime you try some exotic recipe the first thing I have to buy are the spices. So, needless to say I have a spice graveyard. Why not use those spices in everyday meals. That way your ho hum dishes can taste more delicious and kind of have a kick. Today I am sharing a delicious pork tenderloin with a chipolte rub and then using my fresh ingredients to make a vinaigrette. You will shocked at how the addition of a few spices can really kick it up!
Tiki Tenderloin Salad
1 pork tenderloin
1 teaspoon salt
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
1/4 teaspoon dried chipolte pepper
1/2 teaspoon cinnamon
1 tablespoon olive oil
1/2 cup brown sugar
1 tablespoon garlic
Tabasco
2 oranges, peeled and sliced
2 cups baby spinach
1 package slaw mix
1 red bell pepper, thinly sliced
2 avocado, sliced
juice of 1 orange
juice of 1 lime
1 tablespoon mustard
1 teaspoon agave nectar
1/2 – 3/4 cup olive oil
Preheat oven to 350 degrees. Place all of the dry ingredients in a small bowl and then rub the pork loin. Heat a skillet and then add oil. Sear the tenderloin on all sides. Then place in the oven and cook for 20 minutes or until tenderloin is cooked through.
Citrus Vinaigrette
Whisk together the juices, mustard, curry powder, salt, agave and pepper. Slowly add oil and whisk till emulsified.
To prepare salad:
Remove peel from oranges and cut into rings. Slice the avocados and chop the red peppers. Place the greens on a platter.

Apple Dumpling Cake
Apple Dump Cake
1 can apple pie filling
2 apples chopped
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 spice cake mix
1 cup apple juice
1/2 stick unsalted butter, cubed
1 cup chopped pecans
Preheat to oven 350 degrees. Spray a 9×13 pan with non stick cooking spray. In a medium bowl stir together the apple pie filling, chopped apples, vanilla, cinnamon and nutmeg. Pour into the bottom of the 9×13 pan. Sprinkle the cake mix over the top. Place cubes of butter all over the top and then add nuts evenly. Bake for 50-60 minutes or until golden and bubbly. Serve with vanilla ice cream.
