Wow what a day! I spent the day cooking, boating and laughing with my friends from News9! Kelly Ogle and his precious wife, Terri, came aboard the Fat-n-Sassy so I could share some of my favorite Florida foods!It was an easy choice to show off my Mango Colada! Heck, mangoes are in season here in South Florida. They are sweet and so succulent right now. Almost sinfully sweet! It is an easy smoothie drink that brings a little Florida to you wherever you may be!
Thank goodness for the Cuban Sandwich! I knew my friend was no fan of fish so I gave him a quick tutorial on how to make this ham and cheese at home! In fact, I told him if he didn’t have a panini press then a good ole brick covered with foil would do the trick! Cuban sandwiches are served everywhere in the Miami area. They are at every ballpark, arena and restaurant you go to. It is a good ole ham and swiss! Here is my recipe….Watch out! They are addictive!
Cuban Sandwiches
2 sandwich hoagie rolls, cut in half
6 slices virginia baked ham
4 slices swiss cheese
1 cup cooked pulled pork
dill pickles
dijon mustard
mayonnaise
Warm up panini press, George Foreman grill or skillet to hot. To prepare sandwich spread Dijon mustard and mayonnaise on both sides of bread. Top with 2 pieces of sliced cheese, 3 slices of ham, 1/2 cup of pulled pork and pickles. Place bread on top and cook in panini press till bread is toasty and cheese is melted.
