Every year I patiently wait for Norman’s Mayfair! Mom and I went every year and had such great memories!
The 2012 Mayfair is Saturday, May 6, 2012 from 8 – 7pm! So, I am so excited to say that this year I will be bringing my Sweet-n-Sassy truck and serving up my famous Vanilla Bean donuts but also a Fancy Frito Chili Pie! Fancy Pants Frito Chili Pie
2 pounds lean ground beef
1 onion chopped
1 green and red pepper, chopped
1 (14 oz.) can tomato sauce
1 (14 oz.) can diced tomatoes
2 tablespoons masa
1 teaspoon pepper
1 tablespoon paprika
2 1/2 teaspoons seasoning salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground cayenne pepper (for super spicy)
1 teaspoon pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
Serve with: Fritos, Mexi cheese blend, chopped onions, chopped cilantro, chopped jalapeno, sour cream and sliced avocado.
In a large stockpot, saute the onion and peppers till tender. Add in ground beef, tomato sauce, diced tomatoes, and all of the seasonings. Simmer on low for one hour. Stirring occasionally.
To make pie simply place a scoop of Fritos in the bottom of a bowl. Top with chili, cheese, onions, cilantro, sour cream, jalapeno and an avocado slice!
Lite Carribean Pie
1 graham cracker crust, lite (pre-made)
1 fat free sweetened condensed milk (14 oz.)
1/4 cup lemon or key lime juice
1 (20 oz) can crushed pineapple, drained
1 (11 oz) can mandarin oranges, drained
10 marachino cherries, chopped
1 container lite Cool Whip
1/2 cup toasted pecans, chopped
In a large bowl mix together the sweetened condensed milk and lemon juice till completely blended. Add the pineapple, mandarin oranges, and pecans stirring gently. Fold in the cool whip and then pour into prepared pie crust. Top with chopped cherries and place in the freezer. Allow to freeze 2 hours and serve.

Your pulled pork sammies and frito pie were to die for finger licking good. I think we may have even licked the paper serving boats too.
