Well, Fall is here! It never seems to surprise me that I find myself planning parties and get togethers all through the Fall. There are football tailgate parties, Halloween, Fall Girlfriend Luncheons and even Thanksgiving to consider. So, cooking for a crowd is a must. Instead of using a million pans I like to put my slow cooker to work. This super versatile kitchen appliance in a MUST in any home. I think you need a slow cooker before you get a microwave! That is just me….
Here is a recipe for Chicken Tostadas. These are so simple to make and they will feed a crowd in no time!
Black Bean and Chicken Tostadas
2.5 lbs boneless skinless chicken breast halves
3/4 cup chicken broth
1/2 cup Zesty Italian Salad dressing
1 Tbsp fresh lime juice
2 1/2 Tbsp. taco seasoning
1 tsp salt
1/2 tsp black pepper
1 can black bean refried beans
Tostada shells
shredded mexi cheese
salsa
tomatoes
onions
avocado
Place chicken breast halves in the slow cooker. In a small bowl combine the chicken broth, Italian dressing, lime, and taco seasoning.Pour marinade mixture over the chicken in the slow cooker. Cover slow cooker and cook chicken for 4-6 hours on LOW. Shred chicken then cook shredded chicken in broth for 30 minutes on low. Drain broth from chicken. To make the tostadas: Spread black beans onto the crispy tostada shell. Top with the pulled chicken, cheese, lettuce, tomatoes, onions, salsa and sour cream.
