I think it is simple to say that we all love soup but we are not willing to wait for it. Well, these recipes cook up quickly and do not take all day to make! You can even use your slow cooker if you want it to be cooking while you are out. Nothing beats warm soup after a long cold day!
This one is a staple at my house! It was originally brought to me by my hubby’s friend in college when I was home sick. Ever since then I have been making Mrs. Sandra Chambers Broccoli Cheese Soup almost weekly during the winter! Now that is a good recipe.
30 Minute Broccoli Cheese Soup
1 stick unsalted butter
1 onion, chopped
1 tablespoon garlic, minced
3 cups frozen chopped broccoli, thawed and drained
4 cups chicken broth
2 cups 2% milk
1 brick Velveeta cheese, cubed
2/3 cup cornstarch
2 teaspoon pepper
salt to taste
In a large stock pot, sauté the onion and garlic in melted butter over medium high heat till tender. Add in the frozen broccoli and continue sauté for 5 minutes. Pour in the chicken broth and Velveeta cheese. Stir till the cheese melts into the broth. Mix together the cornstarch and milk in a small bowl. Reduce the heat and add in the milk mixture. Cook till thickened. Add salt and pepper! Serve with a green salad.
1 package Frontier Sausage Lentil Soup Mix (Braum’s Fresh Market)
1 package smoked sausage, sliced
1 package mushrooms, sliced
1 onion, chopped
8 cups chicken broth
1 cup red wine
In a large stockpot over medium heat sauté the onions and smoked sausage in a little olive oil. Once the onions are golden in color stir in 2 cans of fire roasted tomatoes, wine, chicken broth, lentils from soup mix as well as the seasoning packet. Cover and cook for 1 hour till lentils are tender!
