These are treats any BUNNY would love. I know it is sometimes just easier to go “pick up something” but it is more fun for the kids if you invite them into the kitchen to MAKE a memory! My treats are so so simple to make. The little pretzel bites I have seen posted all over but of course I added my own twist…turning them into birds nests. Then the sugar cookies are my famous Colossal Cookie Recipe that is sure to be a favorite in your home the first time you make them! The secret is in the decorating.
Easter Bites
1 package of square pretzels
Wilton Candy Melts (white or pink)
1 cup coconut, shredded
1 teaspoon green food coloring
spring m&m’s
egg shaped candies
Preheat oven to 350 degrees. Place 12 pretzels on a parchment lined baking sheet. Put one candy melt disk on each pretzel and then place in the oven. WATCH CLOSELY…you only want the melt to SOFTEN not turn to liquid. Remove from the oven to decorate.
Flower: Place M&M’s on the candy melt in a flower formation
Birds Nest: Place 1 cup of shredded coconut in a ziploc bag and pour in the green food coloring. Toss till the coconut turns green. Then sprinkle the green coconut on the candy melt. and then add egg shaped candies.
Put the pretzel bites in the fridge to set. Enjoy!
Bunny-Licious Sugar Cookies
2/3 cup butter flavored Crisco
2/3 unsalted butter, softened
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla extract
1 teaspoon lemon extract
2 teaspoons baking powder
1 teaspoon kosher salt
3 cups and 2 tablespoons all purpose flour
1 tub vanilla frosting (not whipped)
2 teaspoon Princess flavoring
1 cup coconut
green food coloring
pastel colored sugar crystals
bunny shaped Peep candies
Preheat to 350°. Line a baking sheet with parchment paper or Silpat. In the bowl of an electric mixer cream together the shortening, butter and sugar. Add in the egg, vanilla and lemon flavoring and mix well.
In a medium sized bowl combine the baking powder and flour. Slowly mix in the flour mixture to the butter till well combined. Using a cookie scoop, place scoops of dough on the parchment paper. Flattening slightly. Bake for 12 minutes. Remove from oven and allow to cool.
To frost: Add in the Princess flavoring to the tub of vanilla frosting. Stir and then frost cookies.
To Decorate:
Bunny Cookies: Dip the frosted cookies in sanding sugar and then press a bunny Peep in the center.
