When a friend asks for help I am there! I make house calls. Especially for my good friend Lauren Nelson. You see…this little lady is just about to have her 1st baby and she needed some quick dinner ideas. So, I packed up my stuff and headed over to her casa to give her some quick tips. My “go to” recipe to make in a FLASH is my 15 Minute Pasta. It literally takes 15 minutes from prep to in a bowl ready to eat!

15 Minute Pasta Dinner
1 pound linguine
4 cloves fresh garlic, chopped
1 container grape tomatoes
small bunch fresh basil
1 onion, sliced thin
2 tablespoon capers
1/4 cup roasted red peppers, sliced
1 tespoon sea salt
2 tablespoon olive oil
1 rotisserie chicken breast, sliced thin
In a large stockpot place linguine, garlic, grape tomatoes, basil, onion, capers and red peppers inside. Pour 4 1/2 cups of water over the top. Turn the heat on high to medium high and cook for 10 minutes bringing pasta to a boil. Using tongs to stir throughout. Remove from heat and place on a plate. Top with sliced chicken and sprinkle with parmesan cheese.
After we got done shooting Lauren let me try on her Miss America crown. This chubby lady felt like a million bucks. Oh that crown!!! Just a little inside information….That crown was heavy! No wonder you always see the winners holding on to it!
