Now you have the kids dressed, people showing up to trick or treat and now you think…Dinner? Here is what my crew has every Halloween! Chili bar and Green Chili Cornbread! This is super simple and most likely you have most of the stuff in the house to make. Best part is that it makes a ton. Just head out and have your friends and family nibble and go!
My chili recipe is a bit of a hybrid. Part my mama, part Mark Amspacher from the Diner in Norman and the other part just me! It is super simple and perfect for feeding a crowd! Create a chili bar with all of the fixings! I set out Fritos, onions, cheese, sour cream and cilantro!
My favorite way to cook chili is in the Le Creueset Dutch Oven! This is my go to pan! No kitchen should be without this! In fact, I love to give these as gifts to my favorite brides! Ingredients
- 3 pounds ground beef
- 1 onion, chopped
- 1 tablespoon garlic
- 1 seasoning pack (I like Carroll Shelby’s Chili Kit)
- 1 teaspoon cayenne (if you like it hot)
- 1 large can fire roasted tomatoes
- 1 large can tomato sauce
- 1 cup beef broth
- 1/2 a can of beer
- 2 cups canned pinto beans, drained
- 1/4 cup masa
- In a large stock pot combine all of the ingredients. Cook on medium, using a potato masher work in all of the ingredients. Continue cooking till simmering. Allow to cook 45 minutes and then add in masa to thicken. Stir in beans and return to heat.
- *All of this can be done in a crockpot. Just add masa and beans 30 minutes before serving.
Green Chili Cornbread
Ingredients
- 2 boxes Jiffy cornbread mix
- 1 onion, chopped
- 1 stick butter
- 1 small can green chili, drained
- 1/2 cup sour cream
- 2 eggs
- 1 can creamed corn
- 1/2 pound sausage, cooked and crumbled
- 2 cups mexi blend cheese.
- Preheat oven to 400 degrees. In a skillet saute chopped onion in butter till translucent. In a large bowl, combine Jiffy cornbread mix, onions and butter and 2 eggs. Mix together till all combined. Add in creamed corn, green chili’s, sausage and cheese. Stir till well combined. Place in a well greased 9×13 pan and bake for 45 minutes or until done! Cut and serve with chili!
