This is the time of year when we focus on those things that we are thankful for and today I am thankful for my friend Mandy Heaston.
This girl is a hoot!
This week we are in NYC traveling with Real Women of Philadelphia and last night we had some “free time” so Mandy took me to a Broadway show! I had never been and boy am I glad I went! We saw Promises Promises and it was amazing! Plus, it was laugh out loud funny.
During our adventure through Times Square we got to talking “mom” stuff and Mandy just amazes me! She has a fun blog, http://gourmetmomonthego.com, full of “fun” cooking for your family and kids. It is my “go to” place when I am trying to really do something neat for the kids!
She shared with me a great recipe that is perfect for getting your kids into the kitchen and can also be made for your guests as a Turkey Day appetizer! Imagine your kid’s pride in knowing they were a part of making this year’s Thanksgiving feast a success!
Ingredients:
Whole Wheat Tortillas
2 Spaghetti noodles, uncooked (or toothpicks)
Filling ingredients (We used ham slices, cheese, baby corn, and carrots)
Ranch dressing to dip, optional
Directions:
Cut tortillas in half. Roll one half up to form a horn shape. Secure with a piece of raw spaghetti noodle or toothpick. Fill with the yummy veggies, ham and cheese. Serve with Ranch dressing.
