Cookies to me are like little bites of love. They make me feel all warm and fuzzy inside when I make them. I guess it all goes back to being a little girl. Sometimes I would come home from school and be greeted at the front door with the smell of warm cookies. It was intoxicating. Consequently my love of cookies was born. So now when it is cold or yucky out I try to make cookies for the kids! They love them and so do I. Here are 2 of my new favorites. One is using a favorite of mine in a new fun way! I love Girl Scout Thin Mints. So why not kick it up and snuggle it inside of a dark chocolate cookie? Now that was a fun experiment with delicious results.
Sneaky Chocolate Chip Cookies
1/2 cup unsalted butter, softened
1/2 cup butter flavored Crisco
3/4 cup brown sugar
1 cup sugar
2 eggs
1 tablespoon vanilla paste
1 teaspoon baking soda
3/4 teaspoon salt
3 1/2 cups flour
1 package dark chocolate chips
I package Girl Scout thin mints or Grasshopper cookies
Preheat oven to 350 degree oven. Place parchment paper on a baking sheet and set aside.
In a large mixing bowl and using an electric mixer cream together the butter, Crisco, and sugars together for 2 minutes. Add in the eggs and vanilla and beat. In a separate bowl combine the flour, baking soda and salt. Now add the dry mixture, 1 cup at a time, mixing well. Once all of the dry ingredients are in slowly mix in the dark chocolate chips.
To assemble cookies: using a cookie scoop is easiest. Place one scoop on top of the cookie and then press down around edges of cookie. Add another scoop to the other side, pressing and sealing edges. Place on baking sheet. Bake for 10-12 minutes. Remove from oven and cool on a baking sheet.

Key Lime Cookie
1 white cake mix
1 egg
2 tablespoon key lime juice
1/2 cup flour
1/2 cup unsalted butter, melted
Glaze:
Zest of 1 lime
1 cup powdered sugar
2 tablespoon key lime juice
Preheat oven to 350 degrees. Line a baking sheet with parchment paper or spray with non stick cooking spray. In a medium sized bowl combine the cake mix, eggs, key lime juice, flour and oil. Mix together till it forms a thick cookie dough. Place scoops of cookie dough on baking sheet and gently press cook down. Bake for 7-9 minutes or until puffed and lightly browned on the edge. Cool on a wire rack.
To make the glaze: put all of the ingredients in a medium sized bowl and stir to combine. Pour about a teaspoon of glaze over each cookie and allow it to sit.
